Eggplant Parmigiana

A simple yet delicious vegetarian dish - our Eggplant Parmigiana is also naturally gluten-free! Sliced eggplant is tossed in high quality extra virgin olive oil and roasted to perfection. It is then layered with our roasted garlic and herb ricotta and slow-cooked marinara. Topped with our custom cheese blend for good measure!

Serves: 2 (we recommend this as a side dish paired with some pasta, a salad and/or garlic bread!)
